While exact cuts and weights will vary, an illustrative whole cow share from our farm will include :

  • 80-90 steaks: 1” thick cuts - e.g., Ribeye, Delmonico, Sirloin, Porterhouse, T-bone, Skirt, Flank, Filet Mignon (cut 1.5-2” thick)

  • 36-40 roasts: 3-4lb each - e.g., Brisket, Bottom Round, Rump Roast, London Broil, Chuck, Cross-Rib and Shoulder

  • 8-10 short ribs: ~2lb packs

  • 3-4 brisket: 3-4lbs each

  • 150-160 lbs ground beef
