While exact cuts and weights will vary, an illustrative half cow share from our farm will include :

  • 40-50 steaks: 1” thick cuts - e.g., Ribeye, Delmonico, Sirloin, Porterhouse, T-bone, Skirt, Flank, Filet Mignon (cut 1.5-2” thick)

  • 18-20 roasts: 3-4lb each - e.g., Brisket, Bottom Round, Rump Roast, London Broil, Chuck, Cross-Rib and Shoulder

  • 4-5 short ribs: ~2lb packs

  • 1-2 brisket: 3-4lbs each

  • 60-70 lbs ground beef
